Hida Japanese Skillet & Grill is named for the Hida region (Pronounced HEE-DAH) of Gifu Prefecture, Japan, and for the city of Hida-Takayama, sometimes shortened to just Takayama. Much like Colorado, the Hida region is known for its mountainous terrain and heavy snowfall during the winter. Nestled in the mountains lies several rural, Edo-style cities, including Gero, and onsen (hot spring) city, Hida City, and Takayama.
Takayama, which means “Tall Mountains” as written in Japanese 高山, mirrors the Rocky Mountains that cover Denver’s western horizon, a shared landscape that has bound the two as sister cities since 1960. Like Denver, Takayama receives heavy snowfall during its winter months. Sarubobo dolls are also commonly associated with Takayama, and can be used as good luck charms. We encourage those in Denver to visit the City of Takayama Park located on Virginia Ave & Colorado Blvd, a tribute to the relationship between Takayama and Denver.
The neighboring city of HIda is where we get our namesake in addition to the region it is also named after and Hida-Takayama. The city is best known for its breed of Wagyu, Hida Beef. While Kobe Beef tends to be the most well-known breed worldwide, Hida Beef offers exquisite marbling on almost every part of the cow, resulting in soft, melt-in-your-mouth tenderness with every bite. As such, Hida Beef rivals Kobe Beef among many other award-winning breeds as a top contender for the best Wagyu. While Hida Beef’s scarcity means we can’t off it here just yet, we’d love for you to seek it out on your next trip to Japan.
